Tuesday’s Treats

This is a super healthy and yet over the moon flavorful dip.  You can whip it together quick as a wink and have something ready for your Mr. Right when he walks in tonight.  Those red peppers are so good and healthy.  This is the perfect way to grab some of those mighty, mighty vitamins.  Being healthy is pretty darn easy.  Pop these veggies in the oven and hop on the exercise bike.  Four miles will fly by and you will be making a wonderful dip (from Ina Garten and me!)   Say Grace and dip in!

    • 1 medium eggplant
    • 2 red bell peppers, seeded
    • 1 red onion, peeled
    • 2 garlic cloves, minced
    • 3 tablespoons good olive oil
    • 1 1/2 teaspoons kosher salt
    • 1/2 teaspoon freshly ground black pepper
    • 1 tablespoon tomato paste
    • Preheat the oven to 400 degrees F. Cut the eggplant, bell pepper, and onion into 1-inch cubes. Toss them in a large bowl with the garlic, olive oil, salt, and pepper. Spread them on a baking sheet. Roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking. Cool slightly. Place the vegetables in a food processor fitted with a steel blade, add the tomato paste, and pulse 3 or 4 times to blend. Taste for salt and pepper.  Serve with toast or crackers or pita bread.

  1. It IS so good. NOPE, you don’t have to bike 4 miles. Just takes a bit of the guilt out of it for me. I love that pita bread, sigh. I think I dip WAY TOO much dip on each piece. oh yum…. this is a good one. Have to save some for when Mr. Right comes home. The serving dish for the dip might have to get a bit smaller, haha.

  2. Yummy. Can’t wait to try it. Ok – I don’t ride, but I’ll walk 4 miles to earn the pita bread 🙂
