Pumpkin Pie Oatmeal (for one) (Thank you http://kriscarr.com/recipe/pumpkin-pie-oatmeal/ Kris Carr has helped me more than I can ever, ever repay. She is one smart cookie. You can be a smart cookie too, check out her site. ) Then we will have oodles of more smart cookies dancing around!
1/2 cup oats (gluten-free works great) , 1/2 cup mashed pumpkin, 1/2 cup coconut milk & 1/2 cup water, 1 teaspoon vanilla, 1/2 teaspoon pumpkin pie spice and 2 Tablespoons maple syrup Mix in sauce pan. Cook as usual.
If you don’t want to do the whole pumpkin oatmeal thing………….try your own version of PSL. Pumpkin Spice Latte (for one) two shots of fresh brewed espresso (hey, Grandma’s need espresso to be at their happiest), your perfect amount of coconut creamer, a couple shakes of pumpkin pie spice and a big ol Tablespoon (yes, that is a measurement) of Maple Syrup.
